Breakfast – Day 47

I am continuing to exploit the endless possibilities of Nutella breakfasts and making them with my Venchi chocolate-hazelnut spread instead!

Today I am making wholewheat French toast roll-ups. First I take four slices of wholewheat toast bread, cut the crusts off and flatten out the slices with a rolling pin. Then I spread some Venchi on one side of each slice, top with chopped strawberries, roll the toasts up, dip them in a beaten egg mixed with come cinnamon and finally fry them on a pan until golden brown. Et voilà, the French toasts are ready to be served with a cup of cappuccino!

Breakfast – Day 45

On weekends I often try to make fancy (more or less!) and hearty breakfasts, as opposed to the quick on-the-go ones that I opt for on weekdays.

So the first thing I do is grate some Sorrento lemon zest, mix it with fromage frais and spread the mixture onto two wholewheat toasts. Then I top the toasts with smoked salmon, 2 soft scrambled eggs (adding some fromage frais to beaten eggs before scrambling) and diced feta cheese, sprinkling everything with fines herbes. The toasts are served with fresh spinach leaves, strawberries and caffè latte.

Breakfast – Day 22

French toast for breakfast today, mesdames et messieurs! To make it I beat two eggs with some milk, a drop of vanilla extract and a pinch of cinnamon. Then I pour the mixture over two slices of wholemeal bread and leave them to soak for a few minutes. Finally I fry the slices until golden brown – et voilà! They are served with a sprinkle of icing sugar and some fresh berries.

Breakfast – Day 15

Today I somehow woke up 20 minutes earlier than usual, which means I have time to make myself a proper breakfast in Mediterranean style.

That includes two hard-boiled eggs, sliced red bell pepper, tomatoes and a baby cucumber (the first time I managed to find decent cucumber in London!), a selection of olives and two slices of saucisson with herbes, feta cheese and halloumi cheese each (I found out that these two cheeses are among the healthiest ones only after I bought them!). And also some toasts, orange slices and a cup of tea to complete the picture.

Breakfast – Day 5

I rarely eat hot breakfast on week days, but somehow feel for it today! I’m having crispy fried eggs with seed bread toasts, smoked salmon, slices of avocado and grapefruit, black coffee and orange juice.

Breakfast – Day 4

Today’s breakfast is simple and healthy but at the same time super huge and filling. I am having toasts with peanut butter, topped with banana and strawberry slices, some green apple slices on the side and a smoothie made of coconut milk, blueberries, raspberries and some more banana and strawberries.

Breakfast – Day 3

The last thing you want to do on a crazy hectic morning is to be late to work. That’s why I have the quickest and the easiest breakfast possible: toasts with butter and Berries & Cherries jam, some strawberries and a cup of black coffee.

Breakfast – Day 2

This has been my most favourite breakfast lately – it is very simple to make, healthy and absolutely delicious!

To make the avocado spread I take a very ripe avocado, mash it up with a fork, add lemon juice, salt and pepper – and done! At the same time I also toast a couple of Warburton’s Seeded Batch bread and hard boil two eggs. Now I’m ready to enjoy my breakfast with a cup of green tea!
