Breakfast – Day 25

It is a beautiful morning today, so I am having a breakfast out at Café Rouge at the water side. The breakfast consists of champignons truffés (which essentially are poached eggs with mushrooms and truffle oil on a toasted muffin), some orange juice and a cup of americano coffee.

Breakfast – Day 19

Today I decided to make a sauceless version of Eggs Royale. Turns out, poaching eggs is not the easiest thing in the world! I followed the instructions carefully, adding each egg, cracked into a cup, into a whirlpool created by swirling the simmering water. Still a lot of the white was lost, and I even had to throw one egg away completely.

But at the end of the day, the eggs turned out ok and were placed, together with some smoked salmon, on half of a wholewheat English muffin each and accompanied by some fresh fruit salad and a cup of coffee.
