My 30 (or more!) days challenges

Smoothie – Day 24 – Sunny Yellow

The weather in London has been pretty dull and gloomy the whole week and, longing for some sunshine, I decided to make a smoothie that would look all summery and sunny. Here’s what goes in my blender:

  • Half cup almond milk
  • One tablespoon plain yoghurt
  • Half cup frozen pineapple chunks
  • Half cup mango chunks
  • One small orange
  • A thumb of fresh peeled ginger
  • One teaspoon turmeric

Breakfast – Day 33

My latest obsession is matcha green tea powder which I got from a Japanese supermarket, so I’m making everything with it! Given that I’ve been interested to try a chia pudding for a while now, I decided to combine!

So the evening before I blend half cup almond milk with half teaspoon honey and 1/4 teaspoon matcha powder and add 3 tablespoons chia seeds to the mixture. I let the seeds soak for about 15 mins, stirring them every 2-3 mins. It’s quite fascinating to see how the mixture obtains a jelly-like texture as the chia seeds absorb more and more liquid! Then I leave the pudding in the fridge overnight.

In the morning I add some plain yoghurt, pineapple chunks and another pinch of matcha on top of everything, and it’s ready!

Smoothies – Day 10 – Tropical Fruity 2

Here’s another smoothie made with tropical fruits, which, unlike the previous one, doesn’t contain any powders or supplements – only fruits and milk:

  • Half cup almond milk
  • One banana
  • 1/2 cup pineapple chunks
  • One small mango fruit
  • One passion fruit
  • One peach
  • One kiwi fruit

Smoothies – Day 5 – Piña Colada

One of my favourite cocktails ever is piña colada, mostly for the coconut-pineapple combination. So here I am making a piña colada smoothie, by mixing all the ingredients below, except the last one, in the blender. The desiccated coconut is used for decoration once the smoothie is ready.

  • Half cup coconut milk
  • Half cup coconut water
  • One small frozen banana
  • Half cup chopped pineapple (frozen)
  • One teaspoon coconut butter
  • Half teaspoon desiccated coconut, for decoration

Smoothies – Day 4 – Pineapple/Mango Green Smothie

The world has been going crazy about green smoothies and their health benefits for a while now. And I decided I should give it a try as well!

My smoothie is made of:

  • Half cup coconut water
  • One cup greens (baby spinach + chopped kale)
  • Half cup chopped pineapple
  • Half a large mango fruit
  • 1/4 average-sized avocado.

Obviously, the proportions are variable, and the more fruit you add, the more they will mask the leafy taste of the greens!

Breakfast – Day 19

Today I decided to make a sauceless version of Eggs Royale. Turns out, poaching eggs is not the easiest thing in the world! I followed the instructions carefully, adding each egg, cracked into a cup, into a whirlpool created by swirling the simmering water. Still a lot of the white was lost, and I even had to throw one egg away completely.

But at the end of the day, the eggs turned out ok and were placed, together with some smoked salmon, on half of a wholewheat English muffin each and accompanied by some fresh fruit salad and a cup of coffee.

Breakfast – Day 16

Since I have very little time this morning, I’m going to have the simplest breakfast ever: granola (I like Lizi’s Organic Granola Cereal, even though it may not be as healthy as a home-made granola would be) with yoghurt and mixed fruit (mango, pineapple, kiwi and grapes).
